Twice Baked Potato Stuffed with Shrimp, Bacon and Cheese


Surprisingly easy to put together.  Who knew bacon and shrimp went so well together.


4 large potatoes

1/2 cup diced bacon

1/4 cup finely chopped shallots

1 tsp finely chopped garlie

1/2 cup chopped shrimp

1/2 cup grate d cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup chopped green onions

Salt and Pepper

4 tbsp sour cream


Preheat oven to 400 F.  Bake potatoes 35 - 45 minutes or until tender.  Set aside to cool slightly.

In a medium skillet over high heat, fry bacon until crisp; drain.  Add shallots, garlic and shrimp.  Sauté 2 - 3 minutes just until shrimp is cooked.  Transfer mixture to a large mixing bowl, leaving skin intact; set skins aside.  Combine potato with bacon mixture.  Stir in cheeses and green onions; season to taste.

Spoon mixture into potato skins and re-warm in oven.  Serve each topped with a spoonful of sour cream.

Makes 4 servings and pairs perfectly with a Merlot.
